Summer offers medicine in abundance. The orchards are heavy with fruit, the fields are blooming with flowers, and the herbs are at their seasonal peak. Join us in honoring this fleeting season by creating a traditional herbal shrub; a vinegar-based preparation that preserves both the flavor and the vitality of the plants.

For generations, herbalists have turned to vinegar to extract the minerals, nutrients, and gifts of fresh plants. Shrubs are a beautiful example of food and medicine becoming one: nourishing, vibrant, and deeply connected to the rhythms of the land. Whether enjoyed as a refreshing sparkling beverage or taken as a daily tonic, they invite us to carry the medicine of summer into every season.

In this hands-on workshop, we'll craft a seasonal shrub using stone fruit, medicinal herbs, and flowers inspired by the landscapes of Central Oregon. Along the way, we'll explore the herbal actions of the plants we choose, why vinegar remains one of our favorite medicine-making allies, and how these simple preparations can become part of your family's seasonal apothecary.

 

 

Together we'll explore:

  • Why vinegar is one of nature's most effective herbal solvents
  • Choosing herbs, flowers, and fruits that work in harmony
  • Preserving the vitality of summer's harvest for the months ahead

Each participant will create and take home a jar of the shrub we make together, along with the inspiration to continue crafting seasonal medicine from the gifts growing all around you.

 

Come gather with us to slow down, sip deeply, and celebrate the plants that nourish both body and spirit. Together we'll preserve a little of summer's abundance to carry us through the seasons ahead.
